Swatch removal with unwanted results

I have a file from a customer that contains a Swatch of reflex blue (a pantone color) in the swatches palette. They said we can print this in CMYK, so fine. We trash the reflex blue color from the swatches palette (to save our printer aggrivation), and some of the WHITE text in the file turns to black. Has anyone ever seen this happen? How can I work around this?

Also, all the Reflex Blue in the file has already been changed to process so I dont know why it would be protective of Reflex Blue.

Once you change the swatch from Spot to Process, you don't need to delete it. Check you separations - should only have the four plates. Since the swatch was associated with those fills, deleting it reverted to black.
 
Thank you very much and I tried this. Double clicking on the swatch it says the swatch is imported and cannot be modified. I'll try to find out where this is coming from.

I figured it out; the designer had created the white text on the file with 0% Reflex Blue. Changing the text to White fixed the issue.
