Stopping a phone from receiving e-mail

We had an employee let go while I was out of the office. Can I just change his password to stop his phone from getting e-mails? We also want to forward his e-mail to another mailbox and send a reply that states he is no longer with us. Can I do this with the out of office assistant? Thanks.

You can just change his password to prevent the phone from getting his mails.

I would configure the OOF for that (you could even do it by logging into his mailbox via OWA, but use mailbox settings in the console to have his mail forwarded to a different mailbox.

If I forward the mail through the delivery options under the mail flow tab, will the out of office assistant send auto replies? We're using Outlook 03
 
OOF will send the replies if you have mail flow configured to deliver a local copy as well as forward. OOF is triggered by new emails landing in the mailbox.
