Can I span a RAID 5 volume across storage systems? Such as using a Smart2/DH to create a RAID 5 volume consisting of 6 disks in a StorageSystem U2, and 4 disks in the drive cage of a Proliant 3K? Or would all disks have to be on the same channel, using multiple StorageSystems?

You can span as many disks are you can fit on one card. You just can't span cards.

I have 10 18gb disks, and I would like to use all in RAID 5 array, however, they are 1.6" disks. The drive cage on my Proliant holds 6 full hieght disks, but 3 need to be used for a system partition. I need to get a Storage System rack, to place the other 7 disks. I would like to make them all one volume, giving me ~162GB.
