I got a question does anyone know of a site that lists spam domains or do I slowly have to add them as they come into my Exchange server

See information in Thread10-203769 However, updating is a never ending task. Spam filtering at the Exchangelevel is probably a more time and cost efective solution.
 
You could do worse than going on to and picking up an SMTP-Mail filter such as Fluffy or ASSP which are basically free. Fluffy relies mainly on DNSBL site lists to block mail whereas ASSP relies on analysing the mail itself... you could use both.
