I loked into this (I am using Windows 2k Pro IIS5) and found that it requires an MX Record chnge, I didn't want to go there - my ISP for one would probably have something to say about it.
However, It is possible Sponge and I'm sure you'll get the reponse you need.

For an OUTGOING SMTP server an MX record is not required, although it is required for that SMTP server to recieve mail.
I use MS SMTP for relaying mail from my web apps to my real mail server, works wonders, and I dont have an MX record for the MS SMTP server.

To set up MS SMTP to send outgoign mail, just turn it on and it will work. Although I'd be concerned about security, we dont want those spammers relaying off of you.
