We have 8 5520's and 2 Core 8600's. Each 5520 has a trunk/ehterchannel into each Core for redundancy.

If I CLI onto a 5520 and run a show mac-address-table it does not show any of the users PC's mac addresses, why would this be? All I see is 2 mac addres which are on the 2 trunk ports that go to each core.

Hope you can help!

Try show mac-address-table vid X. Substitute the proper VLAN ID for X.
