There arn't any screen shots in the documentation of the server screen, you may find stuff on the client side.
The screeens in 4 and 5 are pretty much the same, so when you look at the posted screen shots, you may not see much difference. You will find some utilities have been merged together (MONITOR and SERVMAN are now one). So you won't be thrown into something completly new. The only really new screen is the Java GUI that is basicly stupid and usless and should just be unloaded (you can do network administration, but unless you have a fast box with lots of RAM, it will be VERY slow). The GUI gets better in 6, and has many more uses (since some of the comand line programs have been removed or has features taken out. One example would be NWCONFIG, the replacment for INSTALL no longer let you do disk and licnese managment anymore, this is only in 6).
NWAdmin is still around, but there is now Console 1
Read up on SLP, Certificate Authority, and NICI Those are the three gotchas people usually run into (mostly on PureIP migrations).
5.1 marketing material isn't avilable on the web (but I also didn't look very hard). The current version in Netware is version 6 (came out last year), so the only marketing material you can find is on 6 right now.
Just jump up to support.novell.com and download the 5.1SP5 Overlay CD. This will give you the most current version of 5.1 (it is a full install CD, with the patch pre installed). You can run it with two uers with out any problem, when you are asked for the NFK file, there will be a demo on the CD it's self (de a search to get the exact location before you start the install.
