SBS 2003 Backup Question

The SBS backup will backup the entire system, including Exchange.

The SBS Backup wizard is the worst of the bunch because it has no facility for anything other than a full backup every time. This can use way more backup media than is typically necessary and take far longer most of the time than is typically necessary.
You can backup Exchange using the built in NTBackup utility, just select the information store and perform the backup.
