saving all e-mails in outlook

I am the IT specialist in a office with about 10 employees. I was asked to find a way to save every e-mail message that is sent and recieved for each of the employees. We would be saving them on our server. We want to do this to monitor the e-mails that are sent and recieved in our office. What are some options to do this. Is it even possible?
