Up until now all Desktop and Laptop users have had there profiles and files on there Computers.
Although I run scripts that create and map there files on a server, and direct there Word and Excel to open on the server.

The question is I want Laptop users [who have huge files on there Laptops due to Audit data] to have there files automatically copied over to the network. Most of them will keep these files either on there Desktop or MyDocs, which can be redirected.
Will this cause them not to have these documents on there computers when they leave the office /or does Offline files automatically come into play.
I also read the file screening is possible here to prevent movies and mp3's.

Anyone have suggestions on if this is worthwhile implementing. And how would DFS integrate?

Yes this seems to be good option.
For mobile users if you enable offline files all their data will be saved in their my documents folder as localcopy. Once they log into their network the all the files will be copied over to their network share. You need to ensure that the option to synchronise local copy when logging off or on as per requirement is checked.
Also you can use GPO to restrict copying over .mp3 or other video or audio formats to be mapped to the network when sychronisation occurs

Implemeting DFS will give you adv if you move or migrate File and print servers the user will not be effeted by any chnages as you will be only changing file paths within your DFS root.
Also DFS can allow you to easily mange your network shares and folders according to locations, departments etc.
