How can I make the Return Receipt become a default option on all new emails? If there is a way, will it also work on replies? Thanks in advance for any help.

go to your mailbox then:
tools/préferences there you can pick up the option in 'mail/general' to get this "return receipt" for any mails you'll write then
For me, the only walkthrough is creating a new mail stationery with Preferences Options set with Return Receipt checked.
All new memos should then be created using this stationery.
Many users asked me for that, but unfortunately only the security options can be saved.
