how can i restrict the access of my shared SQL server, so when a client logs in via EM, they can only see there DBs?

In addition to disabling guest, check out the Security -> Logins tab in EM. There, if you right click a group or a user, you can make sure they don't have Permit access to your DBs or any server roles that grants them the ability to grant themselves access to the DB.

Instead of removing the guest account, you can remove the public roles ability to read the sysobjects table. This will also restrict the users from looking at the objects within another users database.
