I've to rename my domain from PIPPO to PIPPO1 . How I can do this and where I've to define PIPPO1?

If you need to rename the domain you will need to reinstall Server on the PDC and BDC. That is the only way to accomplish this. Also you will need to reassociate all the computers to the new domain name once you have reinstalled on the servers. -Does that help ya?

"reinstall server" means from services in network neighbborhood ?
I've also to rename my PDC an BDC after I've change domain.
There are any documents where I can see the correct procedure to follow ?
