I'm going to remove an Exchange Server which was dedicated to providing Conferencing and Instant Messaging. What do I need to do to remove all instances of it in Active Directory and my primary Excahnge Server (only used for mail)?

Try these two Microsoft Knowledgebase articles:

Q216498 and Q238369

run dcpromot at the command prompt to remove AD. And I am not to sure on the Exchange Isssue but check out tecnet over at microsoft.com
