How do I access x-applications via a remote unix/linux box? For instance if I wanted to use (graphical, not text version) emacs over telnet (or other protocol) what service do I need to use and what does the display and xhost require?

At a shell prompt type "man xinit" and "man startx".

You need to start the xserver and enable it to listen on a tcp port. When you xinit on the client machine you simply need to give it the port number. Most applications will attach to the xclient so there is no need to do anything further after the xserver has been contacted and a connection is established.
