What I want to do is, the server receives email, and than edit the mail contents or the subject, and send it to another email address.
How can I do it with exchage or another server?
 
You can do this with Surfcontrol emailfilter.
I setup rules to catch a particular email and alter the subject and body and then release it to the original recipient.
As to doing this in exchange, I dont think you can unless you configure the rules in Outlook.
