Yes, as long as you're not encrypted. You have to capture the packets on the network. The easiest way to do that is to mirror the port(s) on the network switch where the gateway card(s) are located. You cannot use Direct Media Connection on the phones or the voice will bypass the gateway. Can't really recommend any freeware, but I can tell you that Wireshark will capture and decode the audio streams. Great for diagnosis.
Check out Digital Loggers, Inc (DLI). I use their devices to record calls off my HFA phones (and a bunch of other stuff) by using a little "Y" splitter with a short cable on one end to tie in the recorder to the handset cord/jack. They will work in parallel on analog devices as well, and they also have gizmos you can connect to PRI spans and trunks to record everything if you want. I think they are dli.com
