Recording all phone calls or select extensions

I am looking for software that will record all the phone call on my Definity G3 6i switch. Any recommendations? I would like to be able to set which extension are not recorded and maybe have the ability to let those users turn on and off this on their phones, but not all users have ability to turn this off. Just upper management. Would also like to use this for training purposes/quality assurance.
