Random jumping of system time jumping on one of our VMware servers since moving physical to virtual servers.

What version of VMWare are you using? Are you pointing the virtual server to a NTP server or are you pointing it to the VMWare server? Have you installed VMTools on the virtual server?

The answer is always "PEBKAC!
 
VMware Tools for Windows v3.5.0 build 158874 was installed on the virtual server.
 
Have you tried to adjust the time settings with in the bios of the esx host. also I would check in the vmware tools to see if the guest is set to sync with host or not and also verify the correct time with in the guest bios. In my network I do not have the guests grabbing the time from host, the guests all sync with the domain. I have this done through GPO's and NTP.
