We have a tip/tipout system that is calculated based upon tips earned rather than sales. We run everything through an excel spreadsheet to determine percentages. Currently, staff walks with their money, but we are moving to a system where we collect all monies and will distribute tips on paychecks.
Now, "How does the Store Collects Employee Tips" option affect the Deposit O/S on the sales reports (or does it). We use the Deposit O/S to reconcile our cash daily. We are assuming that it will not "pay out" credit card tips and only account for cash payments, edit deposits, paid ins, and paid outs.
