Quick Question about exchange 2003

I am migrating Exch 03 from a global catalog03(holding FSMO roles and DNS) to a new GC 03 and retiring the first one.
Here is my plan:
Transfer the FSMO roles to the new box.
Migrate exchange 2003 to the new box.
Public rehoming...and such

Questions:

I don't want to visit each machine to create a new Outlook profile.
It is not advised to remove Exchange of DC.
I would like to retire that box....

What do you guys think....?

So long as you leave the old server up and running you can do mailbox moves and the users Outlook profiles will be automatically updated to reflect the new location. You don't have to go around the users workstations.

Leave the old box up for as long as you think necessary, two weeks is a good plan as it allows anyone who has been on holiday to come back and be automatically redirected. You can then uninstall Exchange and manage the stragglers manually.
 
I like to shut off the old exchange server for a week or so before I remove it.
