How do I give a user the right install software?

Make them a member of the Domain Admins Security Group, but I do not recommend that.

What I typically do when an end-user needs a piece of software installed is connect to their session via our remote access suite, right-click on the executable and select "Run As...", and type in my credentials.

But if they need administrative or power user rights to run the software (e.g. QuickBooks) create a Security Template for the user to grant them access to only the necessary registry entries and folders/files.

Well quickbooks is not the program. It is actually an inventory control program.
 
It wasn't an easy fix but I'll outline a solution for you, what version are you using?
