I have a new PS500x I am installing and it will be connected to a stack of 3750 core switches. What would be the recommended port settings for these connections?

The primary use for this SAN is to store all virtual machines for our VMWare hosts.

Sounds good, the link I provided should help you make all the decisions necessary. Post back if you don't understand something.

Spantree portfast and BDPU Guard, if the links/switches are not in a redundant topology. If they are, and the switchports are only connected to the SANs, then spantree portfast is okay and recommended on those ports.
