Plain Text and old signature problem in email responses - Outlook 2002

There is a guy in my office that is having trouble with replying to emails. When writing a new email to someone, everything acts normally, HTML format, correct signature, etc. When he attempts to reply to an email, it changes it to Plain Text format, and inserts some old signature. We have been unable to find where the old signature is coming from, and what is causing it to change the format.
 

Don't know if this will help, I had a similar problem which was when I replied to a plain text message outlook will reply in text format, but also pick up a different signature.

What I found was if outlook is set to compose Plain Text emails then go and edit the signature, there was the old one which was then editable.
