I have created a report which shows a total duration in seconds (number format). I have used a formula to convert this into mm:ss (text format). This works fine in the report, however when I put this formula into a pivot table it will not allow me to sum, as it is in text format.

How can I create a pivot table to show the total duration in mm:ss, when the original stat is in number format?

I use v 8

In version 8.0, the best you can do is probably to convert your seconds to minutes by dividing by 60 in your original formula, and then displaying the result with decimals so that you are displaying 8.5 minutes instead of 8:30. In higher versions, you can use the "display string" formatting feature to convert the summary results in the crosstab to display in mm:ss format.
