My first thought is to suggest enabling Guest services and program as a Guest room. I have other thoughts but I don't want to look until I know the system type.

If the phone is a 5235, 5330 or 5340 you can use visual voicemail.
If not, guest mailbox type will do it but guest mailboxes have more limited functionality. (No give or make for example)

Another option would be to VoiceMail to Email! Other than that a Guest Box would be the way to go.
