can we customize an Outlook form so that the TO field doesn't display the sender's name but some general name like the "Boxville Company Customer Service"

Off the top of my head, it sounds like you want the form to show the 'Display Name' field rather than the 'email address' field. You could simply change the display name for the relevent contact records, or modify the IPM.message form to show the desired field.
 
1) Can you enter a display name without entering an email address?
2) What's an IPM (from the above "IPM.message form" statement)
 
1) Do you mean in a contact record or in the 'To:' field of a message? You can certainly have a record with no email address, but I don't see how that helps solve the original question.
2) IPM.note is the Outlook Message class, indicating an EMail message form, compared to IPM.contact for a contact form, IPM.appointment for a calendar form, etc. Not to be confused with the Outlook Note, which is a non-editable form.
