Outlook 2000 using POP3 to pull mail from Exchange 2000

I've got an account that is configured to use Internet Email - POP3 to pull email from my Exchange Server (2000). The setup works properly to an extent. It gets the email and sends to the specified smtp relay server. The configuration of POP is to pull email every 1 minute from the exchange mailbox. I see the dialog box flash everytime it checks for new mail. Every morning when I come in to the office, I notice that the mailbox hadn't received any email. I check the server that the account is setup on and there is an error that says,..."was not able to connect to your smtp server: <exchange server>. I believe the POP3 configuration is timing out when connecting to the exchange server, but I don't understand why. Has anyone else experience the same issue? POP3 is supposed to just keep automatically checking for messages. When it errors out, it stops checking thus an application that is dependent on the emails arriving doesn't receive the messages.
 
The actual message is:

"The POP3 server name you specified cannot be found. Please check the name and try again"

This pops up every morning when I come into the office. I'm assuming something overnight is causing the connection to timeout just long enough for the POP3 connection to error out and stop checking.
