Can anyone advise if there are any issues with installing one x portal on a sbs2011 server.
The server already has voicemail pro running on it.

You're gonna regret that as the MS DNS Server will screw up things during time, that counts for VMPro as well as for the One-X.
Never ever install non MS software on a SBS server, it is not without a reason MS stopped with it.

I am just setting up server 2012 and ms exchange 2013, would this be better or am I going to encounter the same problems

No problems with that unless you build it as a Domain controller or a DNS Server.
Only Exchange is fine

I still would not do it.
One-X Portal can be a bit picky and i always suggest using a dedicated server for One-X only (VMPro is not an issue and Xima either)
If Windows licenses is an issue then use the Linux apps server.

BAZINGA!

I'm not insane, my mother had me tested!

I had been debating whether to virtualise the server and run the Linux app server

Do it, it will save your life :)
