I have an interesting scenario that I cannot find any information on after searching forums, google, etc....

My users are trying to open Office documents from Windows 7 machines with Office 2007....
Initially, they are prompted for credentials and edit/read only access, then the Sharepoint site opens inside word or excel instead of the document itself. I've tried this with several Windows 7 machines and they both exhibit the same behavior.

The same document opens fine from a Windows XP machine with Office 2007. Additionally, I can right-click and save the document locally and edit it fine from Windows 7 and XP.

I've tried adding the site to trusted zone, etc.... but I'm totally stumped. I'm more stumped that I can't find information on Google regarding this after seeing the same issue on multiple Windows 7 machines.

Any information would help...even a link to other good sharepoint forums...

I am unclear as to what the issue is. You say that you are having issues with Office documents, but then you say that you are having an issue with SharePoint opening in word or excel. I presume this is refering to the documents and if so, I sure you have tried this, but just in case, have you cleared the open in browser setting for the file types?
