I was looking over this software and saw that you need to create a certificate during the installation. Is this step really necessary? Will communication server still work if I skip this step?

And what's up Microsoft going certificate crazy in the last two years?

No it will not work without certificates. Planning out your Certificates is going to be key to implementing this ( I learned the hard way). There are many components in OCS that will require certificates to work. You can get free certificates here: cert.startcom.org

I recently just set up one of my domain servers as a certification authority. Would of the certificates from that server work instead of getting one online?
