We just upgraded to Office 2003 and have the same problem, the only solution I have is click on view and click on folder list. I was not able to see them in mail view. let you know if I find a fix for this.
The answer is to use the Shortcuts menu and add everything that you want to see to that menu. Then you won't have to switch menus as everything you want is on one menu in the order you want them to appear.
