ODBC link between AS/400 and MS Access

Is there a way to control which fields are imported when connecting to an AS/400 database from MS Access? The AS/400 database has about 300 fields, but I only need 5 of them imported into Access.

You can not control it from Access but you can on the AS/400. Have the AS/400 administrator create a logical file (view) with only the 5 fields you need from the physical file. Then just connect to the logical file.
