newbie needs to learn gpedit

I am used to using poledit, but heard that gpedit would be of better use. I am setting up a university lab, and need to lock down the labuser account as tightly as possible, while still allowing them to use the couple-dozen programs installed on each machine.

How do I use gpedit to set policies on just users, and not the administrator account as well? Microsoft help is rather vague and I could really use some assistance.

If you're talking about using the gp editor in Active Directory, then what you need to do is create different organizational units under a main folder. For instance, I created an organizational unit called Accounts, then created sub-organizational units (folders) called Administrators, Users, Guests. Each one of those sub-organizational units has their own group policy, with different restrictions.
