Net tutorial for server setup?

I'm trying to learn how to setup Windows 2000 Server and Exchange 2000 on a small network just to learn how to use and admin these systems. Can anyone point me towards some good sites where there is a step by step on how to set these things up and what each module in each server platform does? I not going for anything fancy but I want to set up this software and start learning how to use it.

If you have installed w2k server, why not use the "help" function? (startmenu->help)
It covers most of the important issues.
Installing exchange is (or can be) a bit more tricky, but the install media contains helpfiles as well, as far as i can remember.
