Need some Direction Please

ok so I have a home server (apache) on a windows based system, its running ok, now I would like to test scripts in php that use e-mail forms and I would like to setup a email server to work with apache and with outlook.
Do you have a idea for a e-mail server that I can setup and do you have some kind of informatio about how to configure everything???
If you do please help me.

For linux there is Postfix and sendmail. What i have noticed is that sendmail has more documentation than Postfix.

There are many tutorials out there but here is one.

Also if you are a beginner at this try using Webmin.
