My current "Citrix" SQL server has 2 Datastores on it.
One for our 3.0 Farm and one for our 4.0 Farm.
There's really nothing to it.
As long as you size your hardware properly there is no ill-effects. You can even cluster your SQL Datastores and provide high-avalability for all of your Citrix Farms.
We have our SQL server running on a IBM xSeries 345. I've also run datastores on HPaq DL380's and HPaq 580's.
All you would basically do is create your first datastore (name it like Datastore1 or w/e) and point Farm1 servers to it.
Then create your second datastore (datastore2 or w/e) and then point all of your Farm2 servers to it.
