I need to relocate staff members and want their extension # to remain the same at their new location. How do I change the jack's programming(?if that's the right terminology?) so when they move, they take their phone and extension # with them? Or do I need to find a Nortel programmer, which is almost impossible! Help! I'm not that tech-savvy, but I can try!

First, you will probably be better off in either the Norstar or Meridian forums, depending on what system you have. A very piece of important info. Also, take a look at the faqs in those forums to answer some basic questions you may have.
The easiest non-phone tech way would be to tone their cable back to a common point that is shared with a common point of the new locations. Once you do that and label them, just repunch from where they are to where they need to go.
If it is multi site, that is helpful to know too.
