Currently we have the web server, app server and the database server on mainframes. We plan to move the web server to a unix box and leave Websphere and DB2 on the S/390 boxes. Has this been done in the past? ARe there any pitfalls that we should look out for?

IBM wont be happy if you step 2-3 price classes down - but they have made replacements to every software you mentioned on AIX, Linux and NT

Most UNIX-alikes (eg Linux(.org) or * BSD(.org) webserver like Apache(.org) or Squid(.org) does its job on caching and proxying web content well, they run databases and app servers too -
most of these are open source (and free if not counting downloading and burning one CD and people involved) - so you can even fix failures in system code immediatly in house - or buy a support from nearby distributor etc etc
