A quick pop quiz if I may.

If you had a Mitel 3300 with 2 IP trunks to 2 separate sites and you tried to remove/deconfigure 1 of the IP trunks as it is no longer required, then the other trunk link fell over also. What would you be looking for to resolve this? The trunk says its established but calls are no routing over the IP trunk.

Apologies for the scarceness of information thus far but I'm hoping for the kind of response along these lines

"Duh, when removing IP trunks you are supposed to ?????"

as this how now happened twice on different setups.

Well, I would be looking at shared programming.

Trunk Profiles are sometimes shared - did you remove it?
Trunk Attributes ?
ARS Leading Digits should not be shared but could accidently be removed.

I could go on but you should be assuming that you removed something that you should not have. I cannot think of anything that would automatically take down all IP channels. They can and should be programmed such that this does not happen.
