Migration strategy

I presently have one server running windows 2000 and exchange 2000. I wish to move to a new server with Windows 2003 and exchange 2003. I would like to know what the best migration strategy is. I am thinking of doing this:

Setup new server, joint to domain, run domain prep and install AD on the 2003 server and then install exchange 2003. At this point I will copy all the data onto the new server, move the mailboxes to the new server. I am a little stuck on how to decomission the old server in terms of uninstalling exchange 2003 and running dcpromo to remove AD, is it that simple?

Im in the process of doing this as well, we did the exchange 2k3 forest and domain prep first, then did the win 2k3 forest and domian prep. I have just added a new 2k3 dc and moved the roles over as well as migrating DHCP, dns, and WINS... haven't started on e2k3 but quite straight forward !

Im insterested in how to decomission the old DC with exchange.

It's pretty a pretty straight forward move although it can tense I know. Personally I like this order;

Move mailboxes
Demote the server
Assign the Exchange master role to another server
Uninstall Exchange

Make sure you allow enough replication time.
