I have not found (or overlooked documentation).

How many separate 3 party simutaneous conference calls can be made?

The docs do not say, how many differant telephones can create a 3 party conference sessions at the same time. Each telephone is limited to 3 people in a conference call. Within reason you should limit a maximum of 5 telephones conferencing at the same time. Any more than 5 could result in the loss of dtmf resources.
