Micros Res 3700 data not backed up past one year

I was trying to pull last years sales from january 21st 2015, and they are not saved in the backup file. I assume the backup only saves for 1 year from the date you are searching. Can someone show me how to save my sales data moving forward so i can pull the sales for years to come? Also, what is the best way to export sales data into excel?

Yes there is a bit option to be enabled for this and add it to EOD procedures or make a batch file to be running the backup command everyday
