What is the max number of domains that can be listed under one exchange server? and I want all to be able to send and recieve.

Can you be more specific? Do you want to have MX records for multiple domains pointing to your server? I'm not sure if there is any (practical) limit. But you can only SEND from the default account on a mailbox unless you're making the mistake of using POP3.

Today I have a 2003 exchange server running 4 mx records that all 4 business units can send and recieve email. We are building a new domain and the 4 will be moved onto the new domain exchange server plus we will add 2 new business units. So we want to run 6 mx records off one exchange server.

Thats not a problem.

We have a client who runs about 15 distinct domains through a single exchange organsation/AD without issue at all.
