Massive auto formatting

I have Windows Media and using Office 2003. Whenever I want to edit a Word document, whatever edit I choose automatically re-formats the entire document. I.E., when I want to bold a word the entire document "bolds." (The same with underlining or whatever) I can correct it by keystroking "Ctrl Z" which puts the document back to the original format and makes the word I've edited become bold, underlined, etc. I'm tired of constantly using this routine. Is there a way to only change the format edit of the chosen word(s), instead of the entire document each time?
