Two basic options to consider.
1. When color can be used to isolate the object of interest - use the Color Pass effect, possibly in combination with a Garbage Matte on a duplicate of the video to restrict the area affected.
2. Use a Track Matte to isolate the area of interest on a copy of the video and take out all the color from the main clip underneath. This can be very tricky if the subject is detailed and/or moving.
