Logs on opening /copying documents

Is there a possibility in Windows 2003 (with Citrix, so all users working on that Windows2003 servers - documents on a seperate file server) to check which user has opened or copied certain documents?
I need to know who opend a specific document on our file server 2 weeks ago. I didn't find it in the Recently Used Documents, but are there any logs on Windows 2003 to check this?

To be able to check this you must enable audit tracking for objects on your server. (See local security settings) But that will only apply for files accessed after you apply the audit tracking.
