Is there a pen tool preview like in Flash?

Hi,

I've always used Flash for tracing over images using the pen tool as it's got a preview to show you what the line is doing.

I'm teaching myself Illustrator as it obviously has many advantages over Flash for drawing but am finding it difficult to use the pen tool without the preview.

Is there the option for this in Illustrator, if so where do I turn it on?

One way that I do it is by tracing on a new layer, and I only have outline view for this layer. In order to turn the outline view for a specific layer, ctrl+click on the eye next to the layer's name.
 

...one other method is to to place image on a layer, double click the layer, choose template, set a dim percentage for this layer, click OK...

...when in preview mode, the image always stays visible, and also tinted to you can see your trace...
