Is it Possible to log all print jobs that get printed

Hi all is it possible to get the server ( win 2003) to log all the printer use during a day/week so that I can get a handle on who is printing what? I have 3 printers setup in a school and often get junk printed, it would be great to find out who has printed and binned the work.
A further request would be perhaps a script to place this into excell to allow searching of user names and graphic disply of printer use daily/weekly. thanks in advance, stressed school tech

in win 2000 the system log shows who printed to what at what time and can be searched/filtered. I would assume that it was the same in windows 2003.
