Has anybody setup an IP polycom on the IP Office. They customer looking for this has a IP500.

Has it been a month already?
IP Polycoms, even Avaya's 4690 aren't supported on IP Office and may or may not work...usually more of the latter.
 
You can connect the IP6000 and IP7000 series on the ipoffice
But you must be on 5.0 and you need a 3th party endpoint license because they are sip extensions
Sip extensions are supported form 5.0
